For ribs, you can't beat Dreamland's sauce.  I've got a pretty good knockoff recipe.

And jalapeno/mesquite potato chips while you're cookin.  Washed down with beer from an ice chest that has salt added to the ice so that when you open the beer it has ice crystals in it to help put out the belly fire!!!

Just as long as it is pork. There is no such thing as beef bbq, sorry. There is a place here in Atlanta called Williamson brothers thats pretty good. They seel theree sauce in most stores.I do pretty good at home on the ol' smoker too.

When we used to live in the People's Republic of Madison, WI there were two good places- Fat Jack's BBQ in Monona which is still there and Big Mama & Uncle Fats which is gone but used to have great ribs based on rubs rather than sauce. 

There's a few places around here, just haven't had the time to try 'em.

There's a little place called the "Sauk Trail Bar & Grill" 15463 US Highway 12 Union, Michigan
(269) 641-5708. They've got 
some absolutely phenomenal BBQ. The owner has a professional grade smoker and only uses genuine Michigan Applewood. My personal favorite is the pulled pork, and the ribs are also unbelieveable! He's adding Brisket to the menu, and has some unbelievable BBQ sauces.

The bar is really friendly, several beers on tap and great food over and above the BBQ.

Plus, they have a seperate parking area (paved) aside from the gravel lot for "Motorcycles Only" parking.

It's located on Rte 12, about 4 miles West of M-40. Those of us from the Chicago area- take the Indiana Toll Road to the "Elkhart (IN) East" exit- go North toward Rte 12, then East for about a mile. It's about an hour and a half from Chicago and well worth it.

There's fantastic BBQ to be had in Oklahoma.  To be honest, I've yet to find a decent plate of BBQ in the state of Texas.

Black's in Barnwell, SC, pulled pork, paper plates, and iced tea or water (unsweetened tea only if you ask for it).  One price all you can eat with white bread, bread and butter pickles, beans, potato salad, slaw, fried chicken, pork has, and pork rinds as sides.  They make there own sauce and are only open Thursday, Friday, and Saturday.  I never left that place with out being in pain from eating just a little more.

I just got back from Memphis where the 'World Championship Barbecue Contest' was held. Acres and acres of BBQ to be sampled. Wonderful trip. Up here in NY (Long Island) I've yet to find any place that has good enough ribs to write about. If anyone has suggestions (restaurant-wise) I'd be obliged. My folks live in Maine, so I'm going to try those places you wrote about in Ma. on my next trip past. Thanks!

There is this BBQ spot in JUNCTION, TEXAS.

Seems like all the truckers know about this place as well as the locals. We rolled in there one week day on a ride back from Corpus, and the line was out the door. It was GOOD stuff.

There are some great rides through some beautiful country to get out there.  I love the different styles of Q around the country but hands down this is my favorite. 


Ditto on Coopers. Great food, and a great ride to get there. You can't beat the view from Parkroad 4, when the geology changes from limestone to granite. It's like you're suddendly in a different world.

And the BBQ is good too. Now, if they just had the beef ribs from Rib Kings, and the sause from Rudys, with the sides from Rubys, and the music from Artz, why they'd be my dream BBQ joint!

I was out riding with a buddy over the weekend and we stopped at Destination Daytona for a party a radio station was having. We ate at the Pig Stand there. The BBQ was great and the prices were good. It was my first time eating there.

Well,

The place in Junction used to be Cooper's too.......anyway, now that Memorial day weekend is over, who had BBQ over the weekend??

We had Beef Ribs-Pork Ribs-Chicken-Sausage-Brisket and Sirloin Steak (no....not all in the same meal, spread out over the weekend)

We went to Bobarosa's in Del Rio yesterday for the afternoon. Probably the finest biker bar in our area. They had a pig roast over the weekend. Actually 5 pigs in all. For $7.00, a full plate of falling off the bone ribs, and another plate of beans and corn. Nothing like eating good food and watching the water of the beautiful French Broad River roll by. Friendly staff too. If you are in the area to do the "tail", it is worth the drive to see. They had over 1,500 bikers there on Sunday.

This is turning into a "meat marathon".....one of the people at work had a birthday while everybody was off so today for his birthday lunch they brought in..............

Homemade Brisket with Elgin Sausage and
Beans, Creamed Corn, Cole Slaw, and potato salad from Rudy's..........BBQ again........that's ok, it takes me a long time (if ever) to get tired of it.........

I will second Elmer's!!! It is awesome.  There is an up and comer from Purcell Oklahoma that does all of the BBQ's for Ft Thunder HD and people come from miles around when he is cooking.  He is working on financing a mobile BBQ restaurant to go to all of the rallies.  His brisket is UNBELIEVABLE!

Take large Brisket,16-18 pounder and use dry seasoning and rub into brisket while raw.Place 10 pounds of charcoal inside smoker and light.Let charcoal cook for 30 minutes.Drink beer to pass time.Place 3 logs,12-15 inches long on top of charcoal and let smoke for 20 minutes.Drink beer to pass this time.At this time place brisket in smoker and adjust dampers to get steady flow of smoke.Monitor temperature to 225 degrees and keep at this level for 4 hours.At this time pull brisket out and wrap with heavy duty foil and put back in smoker for 8 more hours.Drink more beer and do not touch smoker except to add wood as needed to keep 225 degrees on temp guage.After the 8 hours are up,pull out and let cool down 30 minutes.Cut with butter knife and eat like a hog.Brisket buying tip-when buying brisket at store,place balled up fist in middle of brisket on bottom.Brisket should fold over on both sides.Always cook brisket fat side up also to let juices flow through meat while cooking.

Dawg, I have to agree 100%. I go there 4-5 times a year just for the ride and some good food. It's a fantasic secnic ride on the back roads from Manchester NH.
For anyone riding through VT. you must stop in and see the outside BBQ owned and cooked by Curtis. Served through the window of an old school bus painted blue.

Gooseneck, what temperature do you shoot for on your finished brisket.  I've been taking mine off at 205 degrees.  Sounds like yours might be finished at a higher temp?

Guage shows 225,but meat is higher up in the rack so probably 210-215.I make sure brisket has plenty of fat to keep meat moist.Any nut or fruit growing wood works well when smoking.I trim meat outside to keep mess out of house also.Temp guage I use is probably accurate + - 5-10 degrees.
