I don't know how much time you have, but a few roads I would recommend:

Hwy 50 west out of Canon City is a nice ride, that takes you all the way into Gunnison.
A few suggestions \\;out of \\;Gunnison
 \\;
1) Go into town of Crested Butte (Hwy 135 north out of Gunnison). \\; The road isn't great, but the town is interesting
2) Just east of Gunnison is Hwy 149 that goes south to Lake City, then Creede (Robert Ford, killer of Jesse James was gunned down in Creede), then South Fork. \\; It is one of my all-time favorite Colorado roads.
3) Hwy 92 goes north out of Gunnison through the Black Canyon. \\; Beautiful, curvy road (even better on a sport-bike, but that's a different trip).

A bit further west is a hidden gem Hwy 141 that intersects with 50 between Delta and Grand Junction and goes through Gateway and on to Naturita. \\; This area more resembles Utah than Colorado and is pretty isolated country. \\; The road winds back and forth along bluffs and rivers and is amazing. \\; Just make sure you fill up with gas before heading out in that direction as there are few towns and gas stations along the way.
