I don’t like the bronze colour of the heat shields on my 2018 Fat Bob and am considering spraying them with VHT paint. I’m worried that it won’t last though and soon look tatty.

No, but an alternative you may or may not know about is that Harley has released factory heat shields in black, so you could try it and if it doesn't turn out the way you want, you could get the black ones...
I didn't know that. They're £250 here ($318). I think parts for my Harley are more expensive than parts for my 6-series BMW. Tin of paint is probably around a tenner, so probably worth a try!

Would like to see how the powdercoat stands up to the heat. In the past, would turn gray but that was the twin cams that ran hotter. See if you can ceramic coat, which stands up to heat.
Or can still just rattle can. If you dont like it, can powder it later.
Mine is still on the big radius, in the beginning the where greyish but after coolling down you can wipe it off and they went shiny black again. After a few rides the grey color disapears and stays black.
Al so mine is done with regular powder coat and there is special powder coating for high temp, I recon these wont color greyisch but he, after a while it is done so who cares.
They say the coating will hold up to the heat that the heatshield gets - obviously I’d need ceramic coating for the pipes themselves. I left the parts with them, get them back next week. £60 for satin black. I will post a picture.
