The 114 will benefit you more if you potentially carry a passenger or even if you use a tail bag for traveling. I test rode a 107 and loved it and really want to try the 114 in the heritage. I have said it here on other posts that I am in love with the new heritage to add to my collection. Someone here added a leather tour pack to their heritage and it just makes the bike that much more appealing.

Ride both the 107 and 114 and pay particular attention to engine vibration. Note the mirrors, bars, and foot rests above 2500 rpm in any gear for both on that particular bike. The 114 has low end torque over the 107, but the 107 as noted tends to rev up quickly and runs a bit smoother in my experience in owning both...2018 Deluxe 107 vs 2019 Heritage 114. I traded the Heritage and recovered my Deluxe mainly for the lower seat and suspension, but vibes were also a consideration.

As said, buy what you like most after a test ride if possible. If you’re looking for thoughts beyond that...
How long do you plan to keep the bike? The 114 will sell/trade better.
I’ve heard the 107 will be discontinued. IMO the 114 is good bang for the buck. You may not need it, but I doubt you’ll regret it.
Vibration was not an issue with mine, but if it’s a big deal breaker for you I guess worth considering the few I’ve heard say the 107 vibes less. The 107 I rode was the same as my 114 for vibes.

I think you answered your own question when you said "have no want for or need for speed or a stage this or stage that".
For the record, I have a 114 Fatboy and a 107 Ultra (Which is now a Stage III 114). I did go for the Stage III on the Ultra because I felt the 107 ran out of puff, particularly when I had a passenger on the back.
As someone mentioned earlier, I think a 114 will be easier to sell than a 107 down the track.

I'd like to try a 107 with a 114 Stage kit. That would keep the same 107 stroke but larger displacement via bore. HD uses the same PN balancers in Softails for the 107 and 114 which I suspect allows the longer stroke and larger bore Factory 114 to maybe shake a bit.
All I know is I owned both and rode each within 15 minutes switching back and forth and the 114 blurred the mirrors and shook the bars and foot rests in a Heritage platform. It may have been that particular motorcycle tho. My 107 Deluxe is smooth idle to 5k.
