Default 2007 FXDB dies out and won't start randomly

So I recently changed out my risers. Had to disconnect all electrical pins in the plugs to pull back through the new risers. Got everything reconnected and installed. Bike ran great for a few hour long rides over the next two days. Take the bike out Saturday for a big run. Bike ran great until 20 mins into the ride. Started to choke out and died. Had a hard time restarting but got it running again. This happened two more times throughout the day. Could it just be something simple like a pinched wire or loose connection? The check engine light also comes on

If the handlebar wiring is good, take a look at the crank position sensor.

It's a code for a turn signal. Would that cause the bike to die? I do have LED inserts but I have been running them for a year without any issues. So far anyway

I’d be checking the battery , and the battery connections first !! Had a similar issue and it was a loose battery wire

I also read that it could possibly be a dead battery in the key fob. Just replaced it last night. Hopefully this works. If not I'll be trying the other suggestions. Thanks for the help guys

I don't think it has anything to do with the bar swap. If it were electrical the motor would just die. Since you said it felt like it was being chocked I would think fuel like a possible dirty or clogged fuel filter. Also the fuel line in the tank has been known to get pin hole leaks. if you look inside the tank and turn on the ignition when the fuel pump kicks in if you see any spraying the line is bad. Also the dead FOB battery would not do it. I have an 07 and the battery died in mine last year and I just used the over ride code and the bike ran fine.

Did you disconnect your battery during the rewiring?... and did you tighten appropriately for the reconnect?... sounds like a loose battery connection/ground.
