RE: Taking off front fender
You may be amazed by how much stability that front fender offers the front forks.

Depends on the bike, the late model Dynas have pretty stout front ends but some of the old ricers were damn near death traps without a front fender or fork brace.I imagine the fender does add some stability but probably not enough to notice these days.

Everyone can witness the difference...
You don't have to lift the bike.
Have someone hold it strait or use straps.
Then with the handlebars braced, with straps/rope...
Grab the front tire (front and rear areas) and try to twist it.
Do that with the fender on and off.
Without the fender that tweaking force can actually twist the forks in the trees.
No one in V-Twin Super Sport racing will run without a brace, and those bikes are even lighter.

I have a '73 model yamaha dirt bike and the front forks DO twist off center from the handle bars when you get ridin rough through some loose soft dirt makin hard turns, then you just hold onto the handlebar and give the front wheel a kick and lin er back up again. ( plastic fender)

No front here. No noticableSTABILITY change. It may be a piece of metal, but it bends easily -- not much stability in a flimsy piece of sheet metal, considering what it's attached to.
As for the RAIN: If you don't like the water in your face, you can always tie a rag between your forks about where the fender was. This amazingly stops the rooster tail like a charm.
As for **** in your face: man... nevermind.

Ihad mine off for a while until I hit some road kill. The bike and myself got splatted with chunks of rancid meat and blood. Nasty! Put it back on that day. I really liked the look, but it does serve a purpose.
