If you're going for more cubic inches, you might as well go for the biggest gain you can, unless you simply need to bore your jugs anyway. If you're getting new ones, go 110". Fuel Moto charges $899 for a 107" kit, and $999 for the 110". That's 10% more $$ for 75% more extra cubic inches assuming this is going on a 103. Just my $0.02 worth...

I get that. That's the reason for the caveat "unless you need to bore your jugs anyway". Definitely the cheapest and easiest way to more cubes with only a bore and hone, pistons, rings, and gaskets involved. It's just my opinion that if you're going to all the time and effort, you might as well go for the most you can get. Personally, I just don't feel like all the effort for the sake of a three-point-something percent increase in displacement is worth it.
Before the 110 bolt on kit became available 107 was the biggest you could go without machining the cases. Now you can go to 110, simple as that.
Dollar wise you can bore out your existing jugs to 107 as opposed to outright buying new (thin spigot) 110 jugs. Basically, how much do you want to spend....

Our 107" kits are VERY reasonable.
The 110" combos we have built, have shown some good power.
Either way, happy to lend a hand.
