As replied, EVO's oil system is more flow than pressure. If you've got an oil pressure gauge on your bike, do yourself a favor and remove it. Like johnjzjz posted: If the lifters aren't clacking, you're fine.
FWIW, my 93 runs about 30-35 pounds when cold. Usually around 20-30 hot when running at highway speeds, depending on outside air temp (I have an external oil cooler). Only once did the pressure go to '0', and that was during an extended stop/go traffic jam in downtown Chicago mid August, when temps were in the high 90's. Oil light never went on. I had a oil pressure gauge (actually several) over the first 10 or so years. But tossed it in the scrap because they never would last (leaky silicone). They are pretty useless on an EVO.

My light would flicker at a stop light.
When I have the base gasket replaces, lifters and a new cam I also put in a
new S&S oil pump so now I get over 40 when I first start it up and about
28-32 on a hot day at the light now.
Now I need to find something to replace the oil pressure gauge.
