Short answer: yes it has been done.
Longer answer: it will give you a performance gain most likely, especially if you tune it for the increased airflow. It will also reduce engine temperatures. It's not going to be as good as a 2-1 you purchase, as your stock pipe wasn't engineered for no cat and aftermarket pipes are.
Source: I'm researching doing this also. I'm definitely not trying to spend near $1000 on pipes. $30 for someone to weld it up after I remove the cat and a pipe that's an increase in performance and 'good enough' is fine with me. Especially with 1k still in my pocket

I have done that it the past, cut it flush and welded it shut. If you have a built motor, you are going to want more/better pipe. Also, the sound changes - not for the better in my opinion. But it's just that, my opinion.
However, it's not going to increase airflow and it will run hot where everything in the engine is funneling through the one section of pipe. I did it as an experiment and ditched it within a month.
A real 2-1 has a much larger collector.
