Everyone has different likes N dislikes, take your wife to a dealer (that will let you open road test them) and take her on some test rides.

If you go with a Twin Cam, get a touring bike. Despite the shake at idle, the motor is butter smooth above 2200 RPM's. I have never felt any kind of vibration in my Electra Glide Classic at freeway speeds. I would also recommend a touring bike with a Tourpak for maximum passenger riding comfort.

Perhaps the issue isn't your bike but rather your speed.
You state your Wife doesn't enjoy riding at a speed above 60 mph.
What's your big hurry, why not just keep the speed at 60 or under?
I've spent tons of money making my Heritage the most comfortable as possible for my Wife.
However no matter what I've done my Wife still hates Interstate riding so we limit our time on the Interstate and rarely go over 70 mph.
I've come to the realization that the issue my Wife has is not the bike but rather Interstate riding.
Whenever possible we take the back roads and cruise at 60 mph or less.
Not only is it more scenic but it's also a lot more comfortable riding.
We're planning on a 1600+ mile ride from Omaha to northern Mississippi this fall.
Per my trip planner we'll be on the Interstate for a total of 5 hours of our entire trip.
BTW- we're also planning to take 2.5 days down and 2.5 days back so that's only about 325 miles per day.
I bet we'll do it in less than 2 days, but then again what's the hurry.
