When selling your bike yourself, how do you handle test rides? When someone who says they are interested and wants to take it for a test ride?

Only with full amount in hand. Other wise you may never see it again or they dump it.
Nope money talks.

I bought my only two street bikes without riding them.
But one was dealer new, while the HD had 3,700-miles on it, and was a dealer take back.

I test rode a used bike from a guys house and left my truck there. I would probably do the same if selling.

Cash in hand does it. If they show up to my house riding a motorcycle that helps a lot too. Otherwise, I'll ride it and they can follow me in their car if they like.
If you don't want to deal with that you can have a local indy sell it on consignment.

Have the buyer climb on back, you take them for a ride around the block, go through all gears

I know who to do it.
If they want to test ride the bike, they have to show up on their bike and show me proof of motorcycle insurance, and I will follow them. Just like at a Dealer.
