I've rode with so many people on Sportsters over the years I got used to stopping for fuel every 100 miles. It's burned into my brain, I even do it when traveling alone on a touring bike. Gas, cold drink, bathroom, and hit the road again.

Same here. I used to stop every 120 miles for fuel when I had 2018 FXBB with 3.5 gallon tank. I still do the same after riding touring. Maybe getting older so need to pee more often.
Maybe a touring bike is the right choice.
It's nice to have saddle bag for your lunch and a place to put you jacket when the temps rise in the afternoon.
i think the sporters all went to the 3.x gal tanks now, even on the 1200 from what i have found

If you want new 2021, the choices for Harley Softails with 5 gallon tank are, Heritage Classic, Fat Boy, Softail Slim & LowRider S. Pan Am with 5.6 gallon tank and estimated 46MPG average should do 250+ miles, but many Adventure type motorcycles get some good ranges, several over 300 miles IIRC.
Trust me, I know your pain, one reason I have 2 motorcycles now. Either this afternoon or tomorrow will be my first stop for fuel this week after topping both off over the weekend. Aftermarket or custom large tank fabricate, maybe something like a fuel cell on a tour pak mount, though usually no big deal to stop everyday or day and a 1/2. You might work something out to get a dealer to swap to a larger tank on a compatible bike with the small tank.

current bike is 4.5 gal, which is why i was looking for something similar or larger. had hopes that the sportster s would be similar to the pan am, but that did not pan out. i will look harder at the softails, not sure a touring would suit me

I know. When my wife had her Sporty, it was OK for the distances she usually travelled, but there was a couple times it got tense right before we found gas.
Now, of course, her Dyna gets better mileage than my bagger.
