Will a 5x8 work for a Road King, just one bike, or do you need to go to a 5x10 or 6x10? Ramp doors, are they sufficient for a bike? Don't want too much trailer, probably only use 2 or 3 times a year.

Depends mostly on weight distribution IMO. As long as the majority is forward of the axle, you should be fine. I set up my 5 x 8 utility trailer to haul short term (haven't tried it yet and with the same question...it's close ) but I'm thinking a 6 x 10 enclosed trailer might be the best solution: 1. More room to get around the bike 2. Easier to balance the load 3. More stable in cross winds...and that's just for my Wide Glide.
I got a 6 x 12 enclosed with a ramp on the rear and a side door. Bought it to haul two bikes, but doubt that will be possible. Should have gone with a 7 wide at least. Don't make the mistake I did if you're gonna haul 2.
