Welcome to the forum.
Ignition switch is the first thing I would check.

Does it restart immediately?
Are the lights still on?
Plenty of fuel?

It helps to know what has been checked.

after stalling the bike will immediately turn on and take off again for about a quarter-mile or less and then we'll stall again

Try loosening the gas cap. If the venting of the tank is impaired then the gas can’t flow.

Check for holes in the internal fuel line.
Go over every battery cable, including the grounds, be sure they are clean and tight. Do the same for every fuse and relay contacts.
Is the motor stock or is there a tuner?
