Road hard on freeway (3.5 - 4k rpm) for about 20 min...
Pulled off my exit which came to a stop sign. I noticed when I went to take off from the stop sign in 1st gear my bike blubbered and stumbled almost stalled. I had to give it a couple of blips of the throttle and then she picked up and off I went. Seemed to run fine from then on till home (1.5 miles). Does this sound like my bike may have been sumping? Has me a bit concerned. I have about 5k on the motor currently and it's a 2018 SGS.

If you go to take off right at the instant the EITMS is kicking in it will cause this. In fact, riding in Rush and Stop in Metro Detroit I have these symptoms any time the EITMS is blubbering away stopped in traffic. I have come up with a coping method because on 90+ days I want it working...I do like you did, I blip the throttle a couple of times while still holding the clutch in and off I go smoothly until the next stop in about 20 feet. You can turn it off if you find yourself not really needing it on a regular basis and that would be the best way to negate it....

eitms
I'd turn the eitms off. Itls only a feature to lessen heat to your legs and contributes little in actual engine heat mgmt. also, ditto on clutch switch. that thing will drive u batty if it fails. mine loped, reached, and almost died. dealer replaced 3 of them before discovering HD had a redesign on it.. all good since new one.

One of the symptoms of sumping is increased engine breaking, when you let off the throttle in gear the bike slows faster than normal. Another is the exhaust get louder, even on a stock bike it’s very noticeable. Happened to me 3 times on a 18 trike, before they got it fixed. Don’t own it anymore, but you can also pull over to a safe spot and check the dipstick. I rode a couple of miles pulled over the oil level was at the bottom of the dipstick.

I see what you (unintentionally) did there
