Question hey everyone. new rider, new member

hi everyone

i just got my first harley and i could sure use some tips and advice on how to dial it in and keep it running like it should.
the bikes a 1980 fxe with an 80" shovelhead. like i said its my first bike and i got it with no instructions on how to operate it. when i first start it up. should the choke be fully open? it has an s&s carb. after letting it idle with the choke on for a few minutes i start to close the choke and it dies out. am i just not letting it warm up long enough or is my carb out of adjustment.
thanks for any help and sorry if this isn't the right thread to post this. i really just wanna ride my bike and not have it die on me sitting at a light
