This might help you understand the process for the front wheel, I haven't done my rear wheel yet, The thread uses a different wheel so you'll need different spacers and bearings but the process will be very similar.

I just did a late model wheel on a 1990 FXST. Not sure of the wheel year, but it was of
the 1" axle variety.
Find some 1" to 3/4" Stainless bearing adapters (all over e bay). Then you will have to make
some spacers so the wheel placement is correct in the swing arm. (I made some from
polished SS).
The brake and pulley spacing was the same on the late model and original wheel. The bolt pattern
is the same of course, but the main hole in both the drive pulley and the brake are larger. 2-1/4" as
compared to the 2" on the older wheels. (working from memory, so hope my figures are correct)
The spacers vary with the width of the lip on the bearing spacers, have to do some serious
measuring here....Good Luck to you.

my friend has a lathe, and we could machine everything needed for the conversion...but the 10 spoke aluminum wheels were one reason I got this ultra over a classic with steel wheels.

I dont think I'll be doing this, the wheels were cheap on cl, but the more I've thought about it, the more I think I'll just keep my oe wheels.

Some of us have swapped to later spec wheels (despite the later spec bearings!) but it is more involved than a mere wheel swap. In my case I swapped swingarm and rear caliper as well, up front I used later fork sliders and calipers, along with 1" bearings and axles at both ends.

That news is a bit out of date! When H-D went to sealed ball bearings they well and truly messed up, by using cheap and nasty bearings, it cannot be denied. I even suffered from the darned things with my 2007 Buell Firebolt, although not my 2004 Firebolt, both bought new. Good quality alternative bearings are readily available and in any event the use of bad bearings didn't last long - the reputation has lasted a darned sight longer than the problem!
