230 F is what HD lists in the service Manual as the "normal" oil temp for testing oil pressure in the Sportster engines.

I only see close to the that when running in the interstate when it is 90+ F.

Default Too hot?

Normal operating range according to Harley is 230.
I don't like it. Thinking of getting an oil cooler.

Oil temp is no were near hot yet. Don't worry ride and enjoy. Avoid the internet post on oil temp. They will drive you nuts and have you wasting a lot of money.

I was thinking about getting amsoil the next time around considering it's cheaper than screamin eagle and apparently it is better according to their testing results. It says it can make your motor run up to 10 degrees cooler and last 10,000 miles.

Oil Coolers for Sportsters-
http://www.dkcustomproducts.com/sportster-c155.htm

The 6 row cooler will dissipate about 9000-10,000 BTU/Hr (53-10743-01, SLM 250-6)
The 10 row cooler will dissipate about 14,000-15,00 BTU/Hr (53-10744-01, SLM 250-10)
(The 10 row with lines will add about 12 oz of oil capacity.)

High EOC hp and btu/hr range based on typical dry sump high-performance application and typical variable parameters
Dry Sump Parameters include: oil flow rate, 8gpm; 20/50 engine oil or similar; 140ºF ITD; 80mph airflow.

After a 30 mile ride with ambient at 48F (9C) oil temperature on digital gauge read 194F (90C) easy running 60 ish most of the time.

I wonder how accurate these things are?

From what I have read you can stick it in water and wait until it boils to figure out the temp difference.

Alright so correct me if I'm wrong please, but if I run auto tune and let the VE tables adjust themselves when I pull up the fuel map I can see where my peak torque is? Do to that being where the cylinder fill starts to decline?
