Default Type B oil for Type E Required

The owners manual says Type E required for Fork oil, which I beleive is 5W. Is it okay to use Type B oil, which I think is 10W?

I've read some threads that mention the Screamin Eagle oil (15W); I'm just not sure I want to change it that much, but would like it to slow down the brake dive.

Yes, that will be fine if you want to stiffen up the front suspension. Before I got Progressvie springs, I switched to the Screamin Eagle fork oil, just for that reason. When I installed the Progressive Springs, I went back to the regular weight fork oil.

SportyPig - how much of a diff were the progressive springs as compared to SE oil?

Considerable difference with the Progressive Springs. The heavier weight fork oil will help some, but nothing like a good set of springs. Just that the oil is a lot cheaper than springs for a bit of an improvement. Especially if it's time to change the fork oil anyway.

I recommend that you get a palm wratchet if you don't have one. That's about the only way you can get the stock springs compressed enough to get the cap nut back on. I don't see which model Sporty you have, but if it's a low, the stock springs have to be compressed about 6 inches to re-install the cap nut. Also if it's a Low model, just go ahead and remove the bars, that will make getting "Jeanie Back in the Bottle" a lot easier.
