Not sure about the torque curve and gearing, Sportster might pull harder early, Metrics often rev a little higher and produce their power at higher RPMs.
Modified is a whole different story, you can do anything with enough money.

Oh, the Yamaha Warriors are not jokes. I had a '05 Warrior and rode the p!ss out of it. That's why I'm over on the Warrior forum still. Good group of guys overall. They bash Harleys a lot over there, though and I just got a kick out of watching them squirm in the thread I pointed out. Here's a pic of my old Warrior:

Thing is that these are bikes, not cars. There is not a TON of stuff that can be done "undercover". Things like exhaust, velocity stack, etc. cannot be hidden. I could see an over bore or pulling the baffles, but much of the performance stuff could be seen by a visual inspection.
BTW, someone mentioned that their Sportster made a 5.0L look foolish. I own seven Mustangs and can tell you that the 5.0L Mustang was not that fast of a car (215 h.p. for the 1995 GT, 245 for the Cobra). Power to weight ratio is just not there, like it is with a bike. Race a new GT500 Supersnake with slicks and see how the cager performs then.
