At a loss for carb jet sizing??

Great performance and 40-45mpg fuel mileage is the norm for DJ kit on a bagger
There's nothing wrong with DJ kits for CV carbs. Most times they're put together right BUT...
There's no place for a #48 slow in a stock 88. Accel pump in a CV is non adjustable, so, getting a sqirtful of fuel along with the metered fuel on a too big slow jet will make mileage go south in a hurry. Things get even worst when the needle lifts too soon, (slot #4 from the top?).
Springing for a quick dyno tune after the install of a kit should be part and parcel of the procedure, unless the op has a real good understanding of cv modifications and their effect.
...then there's Mikuni.
