I'm not going to tell you what to do with it, as it's really a decision your boyfriend needs to make. But here are the options
1. keep it, get it running and have a great old bike for you and your boyfriend to remember his father. (That's what I'd do...)
2. sell it as it is
3. throw some money at it and sell it running. This ranges from starts and rides to a complete nut and bolt restoration. Only your funds dictate where in the process to stop
Now with that said, lets talk value. The way it sits it worth between 2000-3000 (some may even say less, I doubt anyone will say more that's ready to hand you money). Running and road safe, 4000-6000. shiny and safe 7000-10000, nut and bolt restoration to correct/concourse condition, maybe $15,000 plus or minus a few bucks.
BUT, unless you can do the work yourself, or find a friend to do it REALLY cheap, it's a project of diminished return. To get it to $5000, you'll put $2000-3000 into it, 5000-6000 to get it worth 7-8000 and every bit of $15k to get it worth 15k.
so if you're looking to sell it, you'll likely do best at selling it as is (or forgive me for saying this, parting it out ... it's worth more in pieces)
I don't know where in NY you are, I'm in CT. if you'd sell it now, I'll throw an offer of $2000 and we can arrange pick up. I'd keep it for myself as a project, and get it to a rideable condition, Nothing fancy, and ride it myself

I don't think this '76 is a Liberty Model ... the Liberty Editions had a special tank badge ... this one has the standard AMF tank badge ... just because it's a '76 doesn't make it a Liberty Edition

Over the years, things get changed. I was more focused on the saddlebags, which are Liberty Edition. Who knows where the fairing went, if it had one, or the original tanks if they were changed at all. We'll never know.

Those saddle bags alone will go well into 4 figures if you can find a set to buy. Any OEM 4 speed bags are getting hard to find in decent shape anymore.
