The build is done, and I pick up my engine tomorrow. The builder found that a press-fit bearing journal on the crankshaft was rotating freely and apparently wasn't supposed to, so we put in a new crank. He also found a pit in the big-end bearing seat on one of the rods that he was concerned could be a future point of failure so we replaced that as well.

Alright, it's done.
Thank you all for your feedback and advice. I appreciate it greatly.
So recapping, I went with:
- S & S 100" Big Bore kit with domed pistons
- S & S 570 Gear Drive Easy Start cams
- Screamin Eagle cam plate (was already in place)
- ported heads with 0.060" over intake valves
- Thunderheader 2-1 headers
- Arlen Ness Big Sucker air filter (was already in place)
- stock MM fuel injection
- PowerCommander III USB
Did a dyno break-in / tune this morning.
VERY pleased with the result, and although - amazingly - we never found the cause of the noise that led to this build, the noise is gone and the engine runs damned strong. I'm very pleased with the sound of the pipes too, but as most people will agree, the build quality isn't the greatest.
