You need the gain somewhere in the middle so that you have good control over your comfort zone. You do not want to turn the volume control **** to much or to little. I would have the gain control set to the minimum of what it takes to get the volume up to the highest level of loudness you will need. This will give you the most adjustability over the volume.
Good points, and I think I have mine in a good spot. At a nice, robust volume on the road the head-unit's volume is at about 1/2 its scale. At 55-60% it's about as loud as I'll ever want it, and the transition from soft to loud is smooth. I have the gain set to 2 o'clock on the Elf amp, which is a tad higher than the 15.7V level I measured a month ago. That's the theoretically correct level for 2Ω on a 125W amp.

On the sony head unit I have the volume goes from 0 to 50 any volume under 32 I was able to turn my gains all the way up and never measure over about 13v dont recall the exact decimal. At level 32 or above I could hit 15.7v at about 1 o clock. One thing I still like about setting with test tone and meter is I can get both channels set with the same gain. I could use a oscilloscope from work but have not intention of getting that crazy. There is so much on the internet on gain settings that no way they will all agree. The next time I mess with mine I am going to measure the amp draw.
