Most amps will be rated 4ohm, but typically that's in a mono config. Running an amp 2ohm stereo is equal to 4ohm mono.
So I would double check your specs, it may be just fine. What type of amp is it? I'll be happy to research it for you and see if I can find the info to help you confirm.

You can, but the 2ohm speaker will draw more current from the apm, thus more watts to your speakers. With all that means is more heat and if the amp isn't designed to run at 2ohm it will "thermal" (shut down to overheating) at higher volumes.

match the impedance of the speakers to the amp.
some amps are able to run 16,8,4,2 ohms others do not
an impedance imbalance can blow the amp- ouch $$
it's up to you to check the specs of your amp
2 ohm speakers are not as widely available in the market.

if you amp is rated to run 4 ohms, you cam use 2 x 2 ohm speakers on each side to total 4 ohm load on the amp.
in which case you would wire amp + to speaker + of the first speaker, then
1st speaker- to 2nd speaker +
2nd speaker - to amp -
that is series wiring.
and that takes care of one side, and you could do the same on the other side
