I ride down to the upper 30's - as long as it's above freezing. But you're in Texas - aren't your low temperatures higher than most of the country's highs? I looked up Ft. Worth, for example, and they haven't had a day this month I wouldn't call a good riding day - maybe the 2 days the highs were in the 40's would have been chilly.

I am good down to the 20's really bundled up with fleece underwear and full leather and chaps, a fleece neck wrap and a gore-tex neck cover. I have an electric vest too that really helps by keeping the core temp up.
I ride until they salt the street, then she's in for the winter unless it warms up and rains and washes the salt away. Then I can head out again.
I live in Chicago, which can have nasty winters, with weeks and weeks below freezing, and many feet of snow. However, last year (2011-2012 winter) we had the mildest winter I can recall. We had a few occasional smowstorms, but it always warmed up and rained a few days later. I was able to ride every month through the winter.

As long as there's no snow, ice, or salt on the roads, I'll ride. I have heated gloves, heated boot liners, insulated chaps, sheepskin seat cover, soft lowers, fairing & wind deflectors and stay pretty warm.
So yeah, if you wanna label me "nuts", I'm fine with that.
