Default Messenger bags to Saddlebags

Has anyone ever done it?

I've been looking at bags and have come to the conclusion that I want real leather. I like the look and durability and I'm willing to give a little extra care to maintain the leather. All leather bags I've found are easily $700 and up which I don't really want to spend, however I've looked at messenger bags (ranged in price) that are the size that I want and have the different compartments on the outside which are pretty cool too.

My bike however is set up with a detachable passenger backrest and thus, throwovers don't work.
Has anyone every bought separate bags and found a way to securely attach them to the bike? What bags did you use? How did you do it? Am I insane?

I have an 06 heritage springer if that helps.

If you don't have a passenger, just use throwovers and throw them over the top of the seat.

My throwovers go under and through my detachable backrest.

and, you can always trim them to fit.

I do have a passenger and I've thought about that. Still might figure out a way to do that but I haven't found a pair of throwovers I like yet
