the easy to adjust bendix was the back in the day chopper carb and still does the job well but its 38 MM and is a little lacking in performance
CV will get better fuel mileage and an S&S will work as it is very adjustable from a sporty to a 100 inch big twin it has a home
i had a SU i took from a junk volvo back in the day and it worked but as you said its a pain

CV...Took an "E" off to put the CV on. More mannerly, better starting, better MPG.
For a "Performance" Carb, I use a Andrews Flowmaster/Screamin Eagle Butterfly. As my needs are Not great, and my Motors are Stock.
BTW, Nothing wrong with the Zenith/Bendix...Very good Carbs, Tho I dislike the adjustable MainJet, and won't use it.
