RE: how hot is too hot?
275 is WAY TOO HOT. Anytime the oil temps go over 250 its additives start going away at a very accellerated rate. Once the temp hit around 275 or so dyno oil itself starts breaking down. That is why synthetics sre preferred for later model Harley engines. It can handle the higher temps much better. The additives still suffer adversly from temps over 250. But the oil itself at least will not turn to sludge on you.

I don't know if 275 is too hot, but I'm pretty sure cooling it off with water is a really bad idea!

RE: how hot is too hot?
Hey... shocked it took the post!  \\;I've got an oil cooler to be installed as soon as I do my next oil change, which should help cooling once it gets rolling after a stop, but seriously it still runs very hot in spite of stage 1, V&\\;H BSS, M1 synthetics \\;and TMAT. We just trailered (I know!) up to Madera and did a 250 mile ride to Sequoia and Kings Canyon National parks, and our temps were pretty identical. 240-250 was pretty much the norm, and fortunately we didn't hit any real traffic to drive the temps up into the upper ranges.

Face it - they tend to run hot out West...
