Small world as I have the same height, leg, and shoe size.
My boots do not hit the bar when braking, nor do they hit the brake or shifter when using it as a resting place.
Overall, the bar looks right on the Heritage.
I still am looking at putting highway pegs on the bar, as I find the "sweet spot" for me is having my heels on the floorboards, and my toes on an angle resting on curve of the bar.

Have them on my Heritage and the wife's Deluxe. Although it was a very difficult decision I decided on the moustache mostly because of the built in footrest. I wound up putting footpegs on them anyway but it still gives me another option.
We also preferred the low profile look over the higher nostalgic and standard models. But it was definitely a tough choice.
One thing to keep in mine is that with the other bars you'll have a wider range of choices for hiway peg placement.
