Wiring help seres or parrellel ?
Trying to understand all this before I blow something and I think I may have wired wrong already, current set up is stock head unit on a 2009 street glide pac loc stinger amp mmats 601 cx how should this be wired ? As I believe stock head unit is 2 ohm ? Right now I have it wired to front channels positive speakers to positive on amp , negative speakers to negative amp

You have it wired correctly. As far as the ohm rating on the HU, that's a non issue once you have an amp in place.

Sounds right. If you are only using the 2 speakers, you should have channels 3&4 not being used.

Also if I use the multimeter and test tone to set the gains how do I figure out what number I’m looking for ? I’ve looked at the chart but still not sure I understand

Technically....
We don't have enough information....IMO.. The fronts come in 4 or 8 ohm. The stinger 700? The Only way to sufficiently power the rears is in 3 channel mode with them wired in parallel to the 350x1 at 4 ohm. Otherwise they will be severely underpowered. Amp is 175W at 2ohms. 125 at 4 ohms. Should be(but no ratings) 75 at 8 ohms which is just enough for your fronts if they are 8 ohm. Sorce |

You will want to wire that in stereo, 1 amp channel per speaker. No series or parallel.
