Default Strange Problem at Highway Speed

I have been out of the country for a month or so and took the bike out this morning. Took it on the highway and went to get up to highway speed and had it pinned and the bike just sat at 75mph. Sort of a stutter but just wouldn't move. Ran great at low rpm and started up on the first bump. Idles great. After my appointment got back on the highway and it was improved and was able to get it past 75. Still not great at higher rpm. Any ideas? Water or condensation in carb possibly?

Carb might need to be flushed, or cleaned.

My money is on the fuel. A month isn't long, but this ethanol stuff is weird. Before doing anything, Use it up or drain all you can then try some ethanol free fuel.
Here's a good app (or webpage) to have - https://www.pure-gas.org/

It's ethanol free. Filled up before I left. Usually do to avoid condensation.

Got some time later today to tinker with it. Weird thing is that it didn't do it on the way home.

I had a similar problem on my '90. Intermittent cutting out at highway speed.

I pulled the carb, gave it a good clean, new jets, new float needle, careful setting of float level, etc. Not sure which one of those things cured it, but it hasn't happened since.
