Didn't buy yet. This is the reason why cause I'm still not sure what to get. If I don't bridge on the SS than I don't get enough watts like the 2 channel Rockford Fosgate 300x2. Should I just buy the 2 channel and get on with my life. (lol)

If I was in your situation with the just the two speakers I would get the Rockford 300x2.
You'll also want to take into account if you're going to expand your setup in the future (bag lids, lowers, tour pack). If so, you may want to look at a four channel amp.
If you don't plan on doing any of this in the near future I would say go with the 300x2. If you decide to expand in the future I am sure you could easily sell the 300x2 for at least 100 and get a good portion of your money back.
I'm sure even running just the two channels with the SS amp the speakers will still sound great. A plus with the 300x2 is that you won't lose your FM reception which is a possibility with the SS amp.

Just got notification from Amazon that the amp is on its way. I was looking at that email and happen to notice that it said when other people bought that Rockford Fosgate PBR300X2Punch, they also purchased the wiring harness WTF!
You mean to tell me the amp doesn't come with the wiring harness?
Shoot me now will you! Now I have to wait even longer?
Just received my Infinity speakers last night, and now I get to wait all over again.

It should come with wires to hook the amp to the speakers. You will need to get a wiring kit to run the power and ground wires to the amp though.
This is the kit I purchased for my install.
