I think that closed loop efi mimics, a bit, how a carburator works, in the sense, that closed loop efi has the ability to add more fuel if the afr sensor detects more oxygen. That feedback loop, I think, is also necessary to make the newer bikes with efi, lope.

I wrote that post because someone said that only a bike with a carburator could lope.
Closed loop EFI does mimic a carburator because of the feedback provided by the O2 sensor, more oxygen means more fuel. And since there are two sensors and two maps its like having two carbs on your bike.(sorta)
At the time I made that comment I had one of nightriders XIED units on my bike to make it richer. My bike was loping. And then it stopped. Never could figure out how to make it lope again. The XIED unit has two independent controls, one for the front and one for the back cylinder. I was experimenting with what setting to put them on.

The Harley lope has little to do with the carburetor.

Since this thread started out by stating that the OP's bike ran well during warm weather, then performance took a dive during a drop in temperature - is this or is it not counter intuitive? My understanding [and confirmed experience] is that any internal combustion engine runs MUCH better in colder, denser air. Is my understanding incorrect?

A lean engine will run better in the summer. A rich engine will run better when the temperature drops. (In general, don't quote me on it)
A lean engine will run better when it warms up. A rich engine will run worse when it warms up.
A rich engine will run better when its cool.
My bike ran lean the other day, very lean. But I have the stock map. Nothing else.
google symptoms of a lean/rich engine
This is not 100% correct but others with more knowledge will fill in the details.
