Good bike leather and good horse tack have the same problems when used and put away in an area that is not humidity and temperature controlled -- I've used training saddles in the Spring and didn't use them again until Fall and they are covered in mold, particularly the fender areas where the horse and rider both sweat on them.

I've worn the same chaps (azzless ones, no less), since 1994. They are as good as new.
Wash with saddle soap, dry in sun, let warm up, rub in bees wax, wipe off excess. Do that to all my leathers, including saddlebags and all leather bags. I NEVER use anything with silicone or animal byproducts, such as Dubben, Mink oil, etc. These will just break down the fibres in the leather and destroy your item over a period of time.
