Default hydraulics clutches

2016 street glide. The brake fluid in my clutch master cylinder is gray and has a metallic tint to it (like metallic paint).
I stopped at the Appleton Harley shop and the service writer told me the fluid is not a covered part under warranty. I know this. He also told me the system is not a closed system which I know it is, just like the brake system. I am an ASE Master auto tech for 17 years. Any thoughts

Yeah, if you already know all this why did you go there. You can flush it yourself of about 30 bucks, which would be both the front and rear breaks as well.They recommend you do that every two years. What am I missing ? Not trying to ridicule you, just wondering what your concern is.

H-D hydraulic systems are not 'closed' systems, they are subject to ingress of air and hence water vapour. It is the latter which degrades hydraulic fluid and the main reason why it should be changed at intervals. Just bleed your systems, if the appearance of the fluid bugs you. How often do you check the systems of customer vehicles?!
