You should make sure that you have a number programmed into your bike so that you can input it to start the bike if you don't have (i.e. lose) the Fob.

Correct, it's also in the service manual.
The owners manual has a handy printout for your wallet with the instructions for the PIN.

does every bike have it's own pin? should I take my bike to Harley to get it, or is there another way

Service manuals are not available from HD in electronic form. Meaning, they can't be downloaded. They must be purchased from a dealer in printed form.
So, if you downloaded a SERVICE manual, it was an unofficial, aka bootleg, copy.

Could you imagine if that was not the case - each dealer may deliver it with their default PIN, and it's left to the wise owners to personalise it.

When stranded with a FOB down, as an interim all you needed to do was apply the PIN - do you know the PIN and how to apply it?
Read up in the owners manual how to view the PIN with a valid FOB present, and how to change it.

That's true, ...... however, I'm pretty sure that it would also contain the instructions for the security system.
