Joker Machine was kind enough to send me a couple of bolts to address the misting issue I was having. I put them on and feel that acceleration is a tad slower now (maybe it's just in my head). Would breather bolts have any affect on performance? 1200cc, tuned.

I imagine, if they didn't breath. You would get pressure building up in the heads but what that would do to performance I couldn't say.

Check to see if the passages in the new bolts are the same size as the old bolts.
