Helping out the front forks is a good idea. There is a Report HERE, with comp charts and a bunch of good info. Counter-intuitively, improving the front forks will make the rear shocks feel like they are working better.
HD Jiffy stands are very sturdy, I would not worry about going taller. I have 13" on my Low and have never had any problems.
When you go from a Sporty that comes stock with tall shocks and you lower it...that is when there can be an issue, since it may not lean over far enough.
btw, if you like the twistys, with taller rear shocks you will gain some ground clearance, plus the bike will fall into the turns easier...quicker steering.
