Right bike for me

What is as important as height is your inseam. I am 5'3", but I have short legs and my inseam is only 27". That restricts greatly my choice of motorcycles if I want to flat foot. I have been riding a Sportster 883 low for a year now, and I love it. If you are a beginner, you might want to stick to the 883 Superlow. Plenty enough power, and you should be able to flat foot the bike unless your inseam is less than mine.

Bought an 883 as my first bike last year. I’m 6’ so cant speak to the height issue but did want to comment on bike type or size. I would think long and hard about your typical usage and how that may (or may not) evolve over time.
I like the 883 because my usage is around town on quick trips where I’m not often going over 60 mph. The bike is small, easy to store in my garage and easy to take out for a quick 30 minute ride. I have friends with bigger bikes who only ride on long trips on weekends where they are making a day of it. That’s not me. At some point I may graduate to that, but right now I like my sporty for quick fun trips around town.

You are on the right track. Ride what you like at the dealer and see what "fits" best.
I'm 5' 5" (barely) and my 1200 C is perfect. I didn't want to upgrade a 883 in a few months so I did not even consider it.
Boots, seat, lowering, etc can always be done. If you are strong in the legs, don't have too many hills to stop on top of and won't be riding 2up often then being able to touch the ground with the ***** of both feet is probably good enough.
