If you're looking to do an all-out resto...check out the following:
J&P Cycles Vintage section - engine/exhaust/6volt electrical,
http://www.roadsters.com/harley/- General history and links to resto body, paint, and information,
http://www.linkertcarbs.com/-carb parts.
This should get you plenty info....J&P usually has the best stuff for resto jobs as they have vast resources.
If you're going for more of a customized ride, check out Jammer, Jireh, Licks, etc. but CALL THEM! They have connections for some of the parts you're looking for.
You may want to start out by trying to find out what color the bike originally was, etc. Get as many factory specs as you can, also. Find out what service announcements have been put out over the years and all that jazz.

I was looking through catalogs at my dealer and they have a V-Twin book http://www.vtwinmfg.com/Catalog1/VTwinCatalogIndex1.htm there it is online
the "Classic" and "XL" sections should get you EVERYTHING you need.
for the parts i looked up from my own ride, prices are way better than stock HD parts. HD wants 182 $ for a kickstand for my bike, these guys want 40 for the same thing. haha
