Roadside Prophets is worth a watch. Not great, but okay.

Another "B" movie in the horror/biker genre is "Chopper Chicks in Zombietown". Great fun in a cheesy sort of way.

A couple more I thought of that haven't been mentioned:

"Mad Max", the low budget Australian film that made Mel Gibson an international star. Lots of outlaw biker action in the post apocalyptic Aussie outback.

There's another one I caught once, but can't remember the name of it. It was a virtual scene by scene remake of the Clint Eastwood movie "High Plains Drifter", but instead of Clint on a horse, the avenging ghost was a tough chick on a chopper who shows up to save an isolated western town from a gang of outlaw bikers. Somebody help me out with the name of this one.

Dont know if this was suggested. Rising Arizona starred a long time friend of mine Randal "Tex" Cobb as a bad *** biker assassin.

I've heard that more than once.

It's such a great movie whether you like biker movies or not; so I wouldn't lump it in with the rest, especially the biker exploitation b-movies.
