Sacrificing the anniversary paint? Hell, you did the bike a favor. Nicely done with the accents you've left. Good job.

I looked at the same bag and fender set up, but I got turned away because that company does not cut for the pipes.

Now let's talk about that $200 paint job. If I do my own prep work and send him my tins, will he do that for me?

Probably not. We trade some work back and forth. He does my paint and I do some mechanical work for him.
