Well the weather and work finally cooperated and I took the bike home the other day- I have gotten 90 miles on it so far, and all is good. Still breaking it in, so haven't really had a chance to see it's full potential. No dyno yet (using a map they had from previous build), but seat meter says it is pulling much harder than my 103 w/255 setup. The 259e gives the bike a sweet lope sound, like an older carb'd bike. The pro pipe ho is louder than my monster rounds, but not by too much. I can still here my radio at 65 using the same volume level as before.
All in all, I am glad I did it- a little spendy, but worth it in my book. I will post numbers, once I dyno it-

Update
I have gotten about 130 miles on it now. Per my builder, I kept it under 3k rpms for the 1st 100 miles and now he wants me to bump it up to 3.5k for the next few hundred miles. This is gonna be tough- from around 2.7k to 3.5k it pulls like a freight train and you can tell, it just wants to keep pulling..... The more I ride this thing, the better it is getting- so far , no regrets at all!

That is what I had always heard so I questioned the HD dealer that dyno tuned my SG after a stage 2 103 build. He explained that they would break in the top end on the dyno. He said it didnt take that long to break in the top end and seat the rings. If I had bottom end work done they may have waited a little longer. I think they put 75 dyno miles on before doing any pulls. (4500 miles on bottom end) Put about 12k miles on stage 2 before trading without any problems. When I traded the bike ran better than the day I brought it home. It was just getting broke in.
