I like the "low" for 2 reasons.
1. The footpeg placement is more natural (for me.) and
2. The front braking system involves 2 rotors, not just 1. Yes, it does make a difference.
Performance should be engine size dependent.
Unless your talking turning/stopping performance. Then, the "low" has it all over a "wide".

Have you ridden a Fat Bob??
Personally I have not ridden a wide, but I have ridden a Street bob and a low, the Fat Bob IMHO outperformes both hands down, BY a BIG margin.
Comfort is a personal preference, I'm 6'0 and around 195lbs, I much prefer forwards to mids, but that's just me.
If you have not ridden one, I would give it a shot.

Yes I prefer the WideGlide hands down...my opinion though. I love the low down feel and feet a little in front. Plus the look of a slightly raked laced wheel is sexy af. I've ridden both. I owned a WG.

Get what you like - then make it right
Out of the box - even set up for another biker - both suck
