Hi El Chiguete,
Black soot, you're running very rich.

Mike you can see that my spark is between two of those in your picture: it's TOO RICH on the top of the thread but on the center electrode and half of the ground electrode looks good...

Could this be because it has oil buildup in the combustion chamber like on this picture?

The reason I ask is because yesterday I put a K&N air filter and I noticed there was some oil inside the air filter cover.

The oil in the Air filter is blow back from the engine. It seems to happen if you have put in a little too much oil in the bike. Mine had it too and I recently decided to stop this permanently with an external breather to vent the hot gases and blowback away from the filter.

Yep I will do that this week and see how it goes on the color of the spark plugs after a good ride on the bike.

Reading plugs is a general indicator of what's going on with your mixture and to some extent your ignition timing/curve. The only way to correct mixture and timing is with a engine tuner, dynamometer, and O2 sensors (exhaust sampling). I believe that a good dyno tune will fix all your issues. To check mixture you need a new set of plugs, and look up the procedure for a "Plug Chop".

This is a good YouTube on reading plugs:
