Default Mustard sauce for transmission oil!!!

Took off my clutch cover to replace my cable having fitted some new bars and was pretty alarmed at the state of the trans oil...was like thin mustard with some real thick gloopy mayo stuff in there for good measure...looks like it's emulsified but in over 18 yrs of owning Harleys I've never seen it that bad if a tall.
The worst thing thing that the bike was new at the end of last year and has only done 350mls!
I was hoping that maybe it was some kind of special oil that the factory put in to be swapped out at the first service but having left it overnight there is definitely some separation going on and I can clearly see water in there.
Baffling thing is where has it come from/how did it get in there?
The bike has never been washed or taken out in the rain, is kept in a heated garage and I don't make the fools mistake of starting it up every now and then through the winter,so can't see it being condensation.
Obviously I need to change the oil but should I flush the trans out as well or just run some clean oil through then change it again?
The engine oil is as you would expect crystal clear...so no water(or condensation) in there.

I would probably put a good 10w40 engine oil in there drive 1 mile out 1mile back, to splash the oil around, then drain and replace with trans oil (your call) ride for a couple hundred, then change trans oil again. Ride a couple hundred and check. That's what I would do. Maybe someone else has a different idea.

Its a mystery how this stuff gets in there but its very common during and just after the winter. Both my bikes have it at the moment and both did last winter. A good long run seems to clear it up OK with no damage.

It sweats inside the cases just as it does on the outside of them. Especially in the spring when the warm moist air comes into the garage and the garage floor is still very cold. The cases do have breather holes.

I hated it when everything in the garage sweated. It took time but I finally insulated and heated the garage no more sweating on the bikes, tools and floor.
