I see Tail of the Dragon mentioned alot. It was kinda fun to ride. Definately do it during the week. We went on a Sunday late morning, way too many jackass crotch rocket riders. Probably won't go back. However, might want to take a look at the Georgia Dragon. Lots of curves and lots of miles. Very enjoyable, more so than the tail. My $0.02.

You could also stay in Cherokee. Gives you easy access to all the great Western NC roads - BRP, Dragon, Hellbender (28), also you're right at the entrance to Smokey Mountain National Park which many have already noted as a great ride thru to Gatlinburg with a stop off at Clingmans Dome. If you're into camping there's a very nice KOA with good tent spaces and some pretty reasonable cabins on the property.

Surprised no one mentioned Iron Horse Lodge south of Tail of the Dragon.
Wife and I love this place..and it's only for motorcycles! Sign up for breakfast or dinner daily and go riding and when you come back it's waiting for you. Also, the nightly firepit with spirits flowing and daily tales of rides is great! Just be aware that a lot of the areas around are dry counties, so bring your own brew! or find the closest place to buy it!

..or a hot chocolate in the rocking chairs in front of the fires in the HUUUGE stone fireplaces in the evening.
