I just recently went from 10" apes to 14" apes on my 2010 Nightster. In my opinion the ride is way more squirrely, its almost sketchy to ride, at higher speeds there is like a wobble in my front end. Is this normal? Any susgenstions?

Sounds like something is loose somewhere? I have 14"apes on my 48, installed them myself and they don't wobble at all. Took a little time to get used to going from stock but nothing squirly.
I just put 16 inch apes on my XL1200L and it does feel imho that it gives more leverage against the bike to lean it to the left or right but I've not had any negative handling issues. You may have something else going on.
I would like to throw on some 12-14" apes on an '08 Nightster with stock bars. Do you guys have some sort of guide you followed? I am assuming some cables will need to be extended but not sure. Would love a procedure to follow.

I have 14" Santee Bananza 1 1/4" fat bars with 3" risers and all new longer cables. Very comfortable and no wobble. Very easy to ride with this set up.
