Default TC88 -> S&S 100", which cam?

Hi and greetings from Finland Sorry to ask same questions where most probably has a million answer. Just couldn't find one. I have purchased S&S 100" big bore kit for my Dyna SB '06 TC88 because I got it for a good price. My main goal is to get strong mid range for my bike, because that is where my driving mostly is. Now the problem is that this kit the CR is 10.5:1. So I guess this CR is not good for a some torque cam. How should I do the setup?
I have already:

- S&S 100" big bore
- TC96 heads which I will send to professional head work and also add manual compression release valves
- V&H Pro Pipe
- Arlen Ness big sucker

I am planning to buy DynoJet Power Vision and after build of course tune the bike in dyno by professional. What cam you experts recommended for this build? So that I still can get power for mid range and not sacrifice too much low end torque also. This high compression rate puzzles me

I would ask the guy that does the headwork,

Why a 37? Why not a 57. Same cam, more lift?

Add.

BTW My choice would be a comp cams TC-3103. Real close to the old Crane H290.
